Peruvian Mixto Ceviche Recipe

Ceviche is a typical Peruvian dish, the mixed ceviche is prepared with raw seafood or fish and marinated with lemon juice. Ceviche is the best sample of the great richness and variety of the products, it is called mixed, because different types of seafood are used in its preparation.

Ingredients
  

  • 8 scallops
  • ½ kg fish preferably white meat
  • 200 gr fresh squid
  • 100 gr octopus
  • 8 sea snails
  • 8 shrimp tails
  • 16 lemons
  • 2 onions
  • 1 chili pepper
  • 2 tbsp ground hot pepper
  • 2 tbsp ground garlic
  • 50 gr coriander

Instructions
 

  • Wash and clean all the shellfish, then cut the octopus and squid into strips.
  • In a pot with water add a tablespoon of salt, then heat it up, when it starts to boil add the seafood and boil it.
  • Remove from the water and run under cold water to stop cooking, then season with salt and pepper to taste.
  • If you want you can pass the fan shells through hot water or add them raw, in any case wash them well and add a little salt and let it rest.
  • Then wash and cut the fish into 1 or 1.5 cm cubes, add a little salt and pepper and reserve.
  • Cut the onion and pass it through cold water to lower the strong flavor.
  • Press the lemons in a separate container, it is advisable not to add all the juice to the ceviche, but to add it little by little to avoid it being too acidic.
  • Add the minced chili in the form of thin strips, also chop the cilantro finely and put it in a bowl.
  • Add the fish and shellfish to the tray, mix with the other ingredients, such as garlic, hot peppers and stir well to integrate the ingredients, at the end add the lemon juice gradually and stir.
  • Finally add the onion, stir well and test the salt level, if it is missing add a little more, if for some reason it was too salty add a jet of cold boiled water or a little fish broth.
  • Serve and enjoy.
