Peruvian Guiso de Pollo – Chicken Stew Recipe

This exquisite, easy-to-prepare stew is an alternative to several on the menu, it is considered a classic dish of Peruvian cuisine. In its characteristic ingredients is the use of the variety of chili peppers, highlighting to give the characteristic color the ají panca.

Ingredients
  

  • 1 cup chopped red onion
  • 8 chicken pieces
  • 1 tsp ground garlic
  • Oil, pepper and salt to taste
  • 2 cups of tomato sauce
  • 1 pepper to taste
  • ¼ cup of liquefied chili pepper
  • 1 carrot
  • 2 tbsp Tomato paste.
  • 1 dried fungus.
  • bay leaf
  • ½ tsp cumin
  • ½ cup Wine to taste
  • 3 Sliced potatoes
  • ½ cup of raisins
  • chopped parsley

Instructions
 

  • In a pot, brown the 8 pieces of chicken with salt, pepper and oil.
  • Then we remove the chicken and add 1 cup of chopped red onion, 1 tablespoon of minced garlic and ¼ of liquefied panca chili (ají panca) and leave it to simmer.
  • Now we add 2 cups of blended tomato, a chopped carrot, 1 pepper slice and 2 tablespoons tomato paste and cook for 10 minutes.
  • Now we add 1 dry mushroom, 1 bay leaf, salt, pepper, cumin and a splash of wine to taste, add the prey and let it cook for 10 minutes.
  • We now place the sliced potatoes, sliced carrots and wait 5 minutes until it cooks.
  • Finally we add ½ cup of raisins, we taste the salt, we verify the cooking of the meat, we place the chopped parsley and that's it.

Notes

This recipe can also be made with pork loin, pieces of meat or if you are partying with turkey or duck.
