The chicken stew has its origin in Europe. As Peru is a country with Spanish influence, many of the dishes of Peruvian cuisine are the product of a fusion. So much so that the origin of the Peruvian stew is from the European countries of Italy and France.
The Peruvian chicken stew is a very nutritious recipe, it is always prepared in Peruvian homes. This is a favorite recipe in the coast, mountains and jungle. Also called Chicken Stew, I can say that it is a delicious dish, easy and quick to prepare, that when you try it, you will love it.
Peruvian Guiso de Pollo – Chicken Stew Recipe
Ingredients
- 1 cup chopped red onion
- 8 chicken pieces
- 1 tsp ground garlic
- Oil, pepper and salt to taste
- 2 cups of tomato sauce
- 1 pepper to taste
- ¼ cup of liquefied chili pepper
- 1 carrot
- 2 tbsp Tomato paste.
- 1 dried fungus.
- bay leaf
- ½ tsp cumin
- ½ cup Wine to taste
- 3 Sliced potatoes
- ½ cup of raisins
- chopped parsley
Instructions
- In a pot, brown the 8 pieces of chicken with salt, pepper and oil.
- Then we remove the chicken and add 1 cup of chopped red onion, 1 tablespoon of minced garlic and ¼ of liquefied panca chili (ají panca) and leave it to simmer.
- Now we add 2 cups of blended tomato, a chopped carrot, 1 pepper slice and 2 tablespoons tomato paste and cook for 10 minutes.
- Now we add 1 dry mushroom, 1 bay leaf, salt, pepper, cumin and a splash of wine to taste, add the prey and let it cook for 10 minutes.
- We now place the sliced potatoes, sliced carrots and wait 5 minutes until it cooks.
- Finally we add ½ cup of raisins, we taste the salt, we verify the cooking of the meat, we place the chopped parsley and that's it.
