First of all, I would like to say, that green beef stove “Seco de res” has become a very popular dish throughout the country as there is no Peruvian household that does not consume it at least once a month, because its unmistakable flavor and the smell that its ingredients give off make this dish one of the most consumed and preferred by adults and children.

Peruvian Green Beef Stew called “Seco de Res” Recipe
Ingredients
- 1½ kg of pieces of meat
- 2½ chopped red onions
- 2 tsp ground garlic
- ¾ cup of liquefied yellow chili
- ¾ cup of liquefied mirasol chili pepper
- 1 cup chicha de jora or lager blended
- 1 cup of raw peas
- cilantro salt pepper cumin water
- 2½ raw carrots cut into slices
- 4½ potatoes cut in two
Instructions
- At first you put in the pot 1 kg meat in pieces with a jet of oil so that it begins to brown and then we remove it.
- Then in the same pot we make the dressing with 2 chopped red onions and let it cook for 5 minutes.
- Add 1 tablespoon of ground garlic and let it cook for 2 more minutes.
- Now add ½ cup of liquefied yellow pepper and ½ cup of liquefied yellow pepper and let it cook for 5 more minutes and we are feeling the aroma that these ingredients give off.
- Then add a glass of "chicha de jora" or beer.
- We now put 1 glass of blended coriander and let it boil.
- Now add salt, pepper and cumin to taste.
- Now return the meat, cover it with water and cover it, letting the dry cook over low heat until the meat is very soft.
- When the meat is done, add 1 cup raw peas, 2 raw carrots cut into slices and 4 potatoes cut in half.
- Finally when the potatoes are cooked we turn off the heat and let everything sit.

History of the dry beef
The origin of this delicious dish is not exactly known, but according to studies carried out, its origin is found in the dry tajime, an Arabic dish made from lamb in whose indications the preparation of a typical dry meat occurs.
Nutritional value of dried meat
Dry meat contains many nutritional properties as beef has iron, zinc and proteins that help the growth of muscle mass, and of course it should be consumed more frequently.
Another ingredient in this nutritious dish is coriander, which is almost a medicine as it contains many antioxidants and also helps fight many intestinal bacteria.
