Peruvian Pumpkin Locro Recipe

Exquisite dish full of color, texture and flavor, the original dish name was rocro in Quechua language, but later with the years, it was changed to called Locro de Zapallo.

Ingredients
  

  • 2 tbsp of vegetable oil.
  • 1 medium onion.
  • 3 garlic cloves.
  • 2 tbsp yellow pepper (optional).
  • 1 kgr chopped macre zapallo.
  • 2 white potatoes.
  • 1 cup of corn.
  • 2 cup of vegetable broth.
  • salt and pepper to taste.
  • 1/2 cup of peas.
  • 1/2 cup of evaporated milk.
  • 1 cup diced fresh cheese.
  • 1 tbsp from huacatay.
  • 1 cup White rice.

Instructions
 

  • Heat the vegetable oil in a saucepan over low heat and fry the onion with the previously minced garlic, until very soft. Add the yellow pepper and cook for 3 to 4 more minutes.
  • Add the pumpkin, potatoes, vegetable broth, corn, salt, and pepper.
  • Add the peas along with the corn, preferably use the ripe peas.
  • Bring to a simmer and partially covered, cook, stirring occasionally, until everything is soft and the squash falls apart.
  • Turn off the heat, add the evaporated milk and the fresh cheese, stir well. Then add the herbs, correct the seasoning and serve immediately with rice.
