Peruvian Pollo a la brasa – Grilled Chicken Recipe
One of the typical and much loved flagship dishes of Peruvian gastronomy, exquisite both for locals and foreigners. Pollerías are special in selling this dish to the public, but you can also prepare it at home for your family according to your culinary skills. Grilled chicken can be cooked on charcoal, wood or gas on a rotary system.
Ingredients
- 1 chicken
- salt to taste
- ground black pepper
- cumin
- minced garlic
- sugar
- vinagre
- lager beer
- rosemary powder
Instructions
- First in a saucepan we put salt, ground black pepper, cumin, ground garlic, a pinch of sugar, a splash of vinegar, a splash of lager.
- Then we put the chicken and we season it with that combination inside and out.
- Now we add a little rosemary.
- While we heat the oven and put the chicken in a source with all its maceration and then place it in the oven for about 45 minutes with a temperature between 200 and 220 degrees, every 15 minutes it should be sprinkled with its juice and fat so that it browns better.
Notes
Accompany, it can be accompanied with salad, French fries, baked potatoes, creams and homemade chili that can be made with yellow chili, ground garlic, salt, pepper, cumin, a pinch of huacatay, a splash of vinegar and oil.
