Sancochado Peruano Receta – Delicious Parboiled Peruvian Recipe

Because, they consist on parboiled meat, vegetables, legumes, potatoes, sweet potatoes, cassavas all cooked into big cooking pot.

Sancochado Peruano Recipe

Since the time of the Incas in Peruvian lands, the sancochado peruano (Peruvian parboiled ) was prepared by skilled cooks and chefs who made it with llama and alpaca meats, with vegetables such as potatoes, yuccas, corn and digestive herbs.

Ingredients
  

  • 3 l of water
  • 2 kg 2 kg beef brisket meat
  • 4 big carrots, peeled and cut into 2 pieces
  • 4 leeks
  • 4 celery stalks
  • 1 turnip, peeled and cut into 2 pieces
  • 4 4 large pumpkin slices
  • 2 2 large white potatoes, peeled and cut into 2 pieces
  • 4 4 cassava pieces yellow peeled
  • ¼ of cabbage
  • 2 sweet potatoes
  • 2 choclos (corn)
  • salt white pepper

Instructions
 

  • At first, in a pot with plenty of water, cook 2 kg of beef brisket over low heat and when the meat is soft, remove it and reserve it with a little broth
  • In the same pot where the meat was cooked, add 4 large carrots, peeled and cut into 2, 4 pores, 4 celery stalks, 1 turnip peeled and cut into 2, 4 large pumpkin slices and we are removing according to the vegetables that are already cooked
  • Then we add 2 large white potatoes, peeled and cut into 2, 4 pieces of peeled yellow cassava and ¼ of cabbage, cooking them in the same way until each one begins to cook
  • In other pot, we cook 2 sweet potatoes and 2 corn that we both cook and cut in 2.
  • At last, we season the broth with salt and pepper, blanching it to a good boil and then serve the vegetables and meat in a platter to also serve the broth apart hot. READY!
